I’ll share my favorite juice recipe that I’ve been told by a Type 1 diabetic tastes like a green apple Jolly Rancher.

Looking back, I shouldn’t have given a diabetic this particular juice. Juiced wheatgrass contains more sugar than powdered Pines wheatgrass. But after drinking my wheatgrass concoction for two months his doctor said his health went from worse to bad and to keep doing what he was doing. His health changed a smidge for the better even though he is eating the average American diet with lots of processed sugar.

I tried another juice with the skin of the lemon on and I didn’t love it. I would definitely cut most of the lemon peel off for this recipe. I like to keep some peel on because the peel has calcium, potassium, vitamins A and C, and helps heal wounds. Apple’s skin contains pectin, which is great for digestion, and has polyphenol, which is rich in antioxidants. Wheatgrass juice strengthens the immune system, improves skin, detoxifies the body, helps with weight-loss, increases red blood-cell count, and lowers blood pressure. Wheatgrass is about 70% chlorophyll. It is a complete food rich in vitamins C, E, K, and B complex including B-12, minerals, such as, calcium, cobalt, germanium, iron, magnesium, phosphorus, potassium, sodium, sulphur, zinc, plus amino acids, and about 80 enzymes.

I store wheatgrass in the open air on the shelf by my juicer for about five days while using it. I’ve tried letting it regrow, but it seems to be lighter. Also wheatgrass molds quickly. I read the mold is harmless, but I throw it away. The mold is usually near soil where I don’t trim.

Note wheatgrass may not be for those who are allergic to wheat, but there isn’t any gluten in wheatgrass because it is harvested before it matures and produces grain. I have had no allergic reaction from wheatgrass. Drinking wheatgrass on its own, I have felt nauseous, but with the recipe below I never feel nauseous.

Jolly Rancher Wheatgrass Juice
2 Envy apples-large
2 inches wheatgrass
1 lemon
1 inch ginger

Yield: 12 ounces

Directions:
Cut wheatgrass with scissors close to root. You may soak wheatgrass for five minutes in cold water to extract as many nutrients as possible. I usually skip this step. Cut the seeds out of the apple because the seeds contain traces of cyanide. Slice apple. Peel and halve lemon. Cut an inch of ginger off root. Slowly juice each piece. I count to ten or so between each piece to get less pulp.
